In fact, Lighvan cheese is made of the milk of cattle feeding on pastures, natural meadows, flowers and plants grown in the mountains of Lighvan . For example, the way of milking of the ship or the technique of making Lighvan cheese, which is specific to each workshop, it is never fully available to others.
The Iranians consider the original Lighvan cheese as Super Lighvan cheese and it involve all sheep cheese produced in areas other than premium cheese and cheeses made from cow’s milk or a mixture of cow and sheep milk that is called Tabrizi cheese.
